The rescued whiskey is transferred into a new, charred oak barrel to continue its maturation. The process of exposing the whiskey to a second barrel gives it a chance to take on additional flavor characteristics.

"This bourbon is big in every way, from its high proof to its exposure to two new, charred barrels. The palate is spicy with notes of leather, wood, molasses, and, of course, vanilla. Very warming on the finish, where it offers subtle flavor of nutmeg. If it feels a little hot, add a splash of water or an ice cube to tame it."
