Produced at Distillerie Poisson on Marie-Galante, part of the Guadeloupe archipelago, Père Labat is one of the oldest distilleries in the Caribbean.
The estate covers over 1,300 acres and uses four native varieties of sugarcane — red, white, blue, and gray — hand cut and brought to the distillery by ox-drawn carts.

Distilled in copper Creole column stills, the rhum is rested in open-top wooden foudres for 10 to 15 days before being bottled at the island's traditional "local proof" of 118 proof.
