Pickering's // Scotland
Business partners and friends Marcus Pickering and Matthew Gammell founded Summerhall Distillery in 2013. A year later, they released Pickering's Gin, the first gin produced in Edinburgh in almost 150 years. This expression is based on an old Bombay recipe from July 1947 that was kept as a family secret until the distillery began production. Starting with a grain spirit, nine botanicals - juniper, coriander, cardamom, angelica, fennel, anise, lemon, lime and cloves - are macerated in the spirit for 24 hours. After being distilled in 500-liter copper still, the gin is bottled at 42% ABV.
Distilled GinThis style of gin takes a neutral spirit and then adds juniper berries and other natural flavorings before it is re-distilled. After distillation, additional flavors (artificial or natural) and sweeteners may be added.
