Plantation Fiji 2009 (2019 Release)
This limited edition expression was produced in 2009 at South Pacific Distillery from molasses that was fermented 4 to 5 days. It was distilled on a combination of copper pot and column stills, then matured for 7 years in ex-bourbon casks. It was then transferred to France where it was aged a further 2 to 3 years in ex-Ferrand cognac casks.
A dosage of cane sugar caramel E15oa between 0% and 0.1% was added before bottling in 2019 at 44.8% ABV.
