Privateer uses a combination of grade "A" molasses and real boiled brown sugar (simmered pressed cane juice) along with a proprietary yeast selected for this specific rum. It goes through a long fermentation process (six days) and is double-distilled. The first distillation is done in a pot-still and the second in a still with plates added, more than their amber rum. The distillate is transferred to stainless steel tanks for a couple of months.
Soft water is added in stages throughout and at bottling, the rum is 80 proof. Unfiltered. No additives including sugar. .
