A more classic tasting bourbon than its flagship cousin, sweet, vanilla and caramel, medium rich with a nice tail where the oak comes in. One of those quintessential bourbons that ticks all the boxes but then doesn't stand out for the same reason.
As a bourbon novice, I really enjoyed the flavor. Cavehill doesn't have the typical tannins or spicy backend of most bourbon, especially high-rye bourbon. As a consequence, it does lack serious depth as the finish is short. However, it is pleasantly honey sweet and lacks any harsh, sharp flavors. At 95 proof, don't expect to find much oak or spice, but the outright lack can be a letdown to some.
