Redemption Sur Lee was influenced by the French winemaking technique called "sur lie" — wine aged with the lees (mostly dead yeast cells). Here, Redemption uses the backset that comes off the still during distillation which they are calling "whiskey lees." These whiskey lees are placed into the barrels before aging and then the barrels are periodically rotated to keep the whiskey interacting with the lees.
Redemption Sur Lee is bottled without chill filtration at 94 proof. Originally released as limited edition in October 2022, this was added as a permanent addition to the brand's Specialty Series in August 2024. (SRP $59.

RyeRye produced in the US must be made of at least 51% rye and it must be aged in new, charred oak barrels (no age requirement). Elsewhere, it will be made according to the country of origin's rules regarding the recipe and minimum aging.

Tasting Notes
"The nose offers licorice, rye spice, caraway seeds, and agave syrup along with apples in multiple forms: crisp and waxy-skinned, alongside mushy and baked. The palate has a bitter tinge with burnt toast, orange pith, and grapefruit zest, as well as clover honey and tannic oak. The finish is short, with anise, a floral punch of violets and potpourri, and dulce de leche. "
