Rhum J.M. Blanc is produced from estate-grown cane harvested each spring after a full year's growth. Within an hour of harvest, the brand has fresh-pressed sugarcane juice which is then allowed to undergo a natural fermentation for 36-48 hours. The fermented juice is distilled in a Créole copper column still to 70% ABV after which the rum is rested for at least three months in stainless tanks. It is then reduced to bottle-strength with volcanic, mineral water sourced from the estate.
Rhum Agricole BlancRhum distilled from fresh sugarcane juice. Has either been left alone to rest for 3 months, or if aged in oak, must not exceed 3 months in barrel. In Martinique, must be bottled between 80-110 proof.
"J.M.'s Blanc Agricole opens with vegetal (green bell pepper), cane-like aromas accented with black pepper. A sweet grassiness coupled to light, green chile heat announces the palate which is bolstered by a salty minerality. The finish is consistent and lingering. A perfect mixer, J.M. is especially refreshing with a splash of lively mineral water."
