New Orleans rum producer Roulaison Distilling launched at the end of 2016—Roulaison is the French-Creole term used for the sugar cane harvest. The distillery focuses on a pre-industrial style of rum, using pot stills and small batches.
They also use 100% Louisiana molasses. The Barrel Aged Reserve is matured in a diverse range of casks, including different sizes and different original uses, and is put into the cask at 110 proof.

"A rich, sweet nose pulls you in with candied pecans, caramel and crème brûlée, as well as raw honey and maple syrup. The palate continues on the same track, showcasing medjool dates, syrupy candied fruits, molasses, and baking spices.
