Taking their wheat-based organic aged vodka as a base, they then infuse it for 24 hours with fresh botanicals--including three types of juniper. It then rests in virgin air-dried oak for 12 months. After that, it is re-distilled in copper pot-stills with more fresh organic botanicals added.
The gin then is stabilized and aerated for 3-6 months. It is bottled without filtration. .
