Reviewed August 17, 2023 (edited January 12, 2024)Woodsy nose which could indeed be cypress. There’s a smoky herbal sweetness too. When i really stick my nose in i get cinnamon, apple, vanilla, cocoa, and a lingering briney smokiness. Intriguing. Wonderful mouthfeel. The flavors from the nose appear with added caramel and burnt sugar, sweet enough to hint at creme brulee before that peppery smokiness hovers back in from the edges. Reviewed December 18, 2022 (edited October 31, 2023)There is indeed a sense of sea salt here, along with a light touch of bracing pine. Quite interesting, and not distracting in the least. Rather, it adds an air of reflection and curiousity. More high notes than low as it plays out on the palate. A slow sipper with perky rye and a long peppery finish. We can see this working exceptionally well in a Sazerac.
