Reviewed August 17, 2023 (edited September 27, 2024)Woodsy, conifer nose which could be cypress. There’s a smoky herbal sweetness. When i really stick my nose in i get cinnamon, apple, vanilla, cocoa, and a lingering briney smoke. Palate: The flavors from the nose appear with added caramel and burnt sugar, sweet enough to hint at creme brulee before a peppery smokiness swirls back in from the edges. Very aggressive, spicy apple pie with spruce tips baked in. Long spicy oak, herb and apple pie finish. This is better than ryes in the Barrell line, which is perplexing. Reviewed December 18, 2022 (edited October 31, 2023)There is indeed a sense of sea salt here, along with a light touch of bracing pine. Quite interesting, and not distracting in the least. Rather, it adds an air of reflection and curiousity. More high notes than low as it plays out on the palate. A slow sipper with perky rye and a long peppery finish. We can see this working exceptionally well in a Sazerac.
