Gran Dovejo Añejo is a 100% blue weber agave tequila. The agave is harvested at peak maturity and the piñas of the agave are then roasted in traditional clay ovens for as long as 36 hours. The piñas are shredded in a mill and the agave juices are fermented with champagne yeast.
Music is played during fermentation, as it is believed to optimize the yeast's conversion of sugar to alcohol. The tequila is double distilled in Alembic copper pot stills. Finally this añejo is aged for up to three years in American white oak barrels.
