Tequila Gran Dovejo is located in the Highlands of Jalisco and produces only single-estate tequilas. The agave plants are grown by a fifth-generation agave grower in Los Altos.
The piñas, or hearts of agave are harvested by hand and then roasted in clay ovens for 36 hours. The piñas are then shredded, the juices extracted and fermented and then double distilled in copper alembic stills.

Tequila BlancoDistilled from 100% blue Weber agave, it is typically unaged , clear, and bottled straight after distillation. Sometimes rested in stainless steel up to 60 days and can also be aged in wood for no more than 30 days.

"The nose is bright with citrus, white pepper, and fresh agave sugars. On the palate, this is a lithe, and bright flavor profile, with lemon marmalade, grapefruit peel, fresh agave, black pepper, and artichoke hearts. The finish is light, but enjoyable with a big kick of black pepper, before an herbal note of rosemary and mint."
