After noticing the lack of an available Italian gin on the worldwide market, bartenders Danilo Tersigni, Francesco Medici and Filippo Previero decided to help fill that void. They decided to create a spirit that would include botanicals that were once used by the Ancient Romans. In 2014, after partnering with English Spirits Company, a craft distillery, they created VII (7) Hills Gin, named in honor of the seven hills of Rome.
The gin starts with a base spirit distilled from sugar beets. 12 botanicals - juniper, artichoke, fennel seeds, blood orange, bay leaves, alexander seeds, sage, lemon balm, lavender, coriander, chervil and celery - all harvested from Italy, are then added to the base spirit. Following distillation, the gin is then bottled at 41% ABV.

London Dry GinNeutral spirit flavored with juniper and other botanicals. In the US, the minimum ABV is 40%; In the EU, it is 37.5%. Originally, only made in London, this can be made anywhere. No artificial flavors or colors can be added. Only water, neutral grain spirit, and sugar (no more than 0.1g/l) can be added.
