Nose of speculoos cookies with all their caramelized sugar and cinnamon, a bit of toasty oak, leather, alcohol (not overpowering, just there, and acting as an aroma delivery vehicle, much like it would in a perfume or cologne). Undiluted, and served in a glencairn glass there is wood, fiery alcohol, black pepper and cloves that burns my lips on the backend. 107 is certainly a higher than normal proof, but it drinks higher than that. When diluted with several small drops of water, it seems to mellow and allows the sweetness and cinnamon spiced cookie to come out, but the finish is still pretty warm. In a rocks glass with a 2" ice cube, the bourbon can shine a little more, but with still a moderate (but tolerable) amount of burn. The aroma was divine, but the mouthfeel is rough, much moreso than the Weller 12 I had last night.
