Wahaka Mezcal Joven Madre Cuishe
Wahaka Mezcal // Oaxaca, Mexico
For this release, Wahaka Mezcal harvests wild madre-cuishe from the lowlands of Oaxaca’s Central Valleys. Typically found at 900-2,000 meters above sea level, the rare agave is harvested after a minimum of 12 years of maturation. The agaves are cooked for 3-5 days in an earthen pit using ocote or pine wood. The cooked agaves are crushed in a tahona and fermented for 10-12 days in open pine vats using wild yeast. Distilled in copper pot still and bottled at 84 proof with no aging.
Mezcal JovenA spirit distilled from one or more different varieties of agave. Can only be produced in designated areas within 8 different Mexican states. Must be bottled in México. This is unaged or aged in stainless steel or plastic containers before bottling.
"Fruity and herbaceous on the nose, with lime and agave notes standing out. There is a noticeable minerality, umami and earthiness as well as notes of white pepper and grilled pineapple which the warmer temperatures and drier conditions of the volcanic terrain seem to have brought out in the mezcal. The dry, medium finish shows hints of grass and citrus. "
