Distilled in Matatlán, Oaxaca, Xicaru Mezcal is made by Mezcalier Fernando Santibañez using his grandfather's recipe and traditional methods. It's distilled from 100% espadín agave which is cooked in a conical stone oven using mesquite and ocote (the indigenous name for "pine wood"). The agave is crushed using a tahona and fermented in an open-air pine vat before it is double distilled in a copper pot-still.
It is brought down to 40.5% ABV before bottling. Xicaru (zee-KAH-roo) is the Zapotec word for "beautiful".
