Uncorking- Nose- Rye spice dominates but let it sit for 10 min and it opens up a lot. Banana, rye, light char, burnt caramel. Hints of mint and pine cones. Very little burn for a 132 proof. The spice mellows on the nose quick. From a certain angle I strongly get cola syrup. Another smells like a cotton candy machine. This is complex and intriguing.
Taste- tons of flavor, big hug, heavy rye spice followed quickly by spiced nutty banana bread. Oily rich mouthfeel, mellows into some fruity sweetness. The word the comes to mind is balanced. Don't mistake that for mild, this is not. Hard to achieve with such bold flavors. Some deeper rich flavors like barrel woods, oak, cedar, candy like with toasted rye bread.
Finish- mellow sweetness and spice lingers a long time on the tongue. Mildly drying it also makes my mouth water. The heat lingers a long time and give my tongue tingles.
Overall I'm really impressed with this bottle. This is restoring my faith in Canadian Whiskey. This is one of the top ryes I have tasted this year.
