Gleaned from various websites: This is distilled from 100% Bolita Belatove pink corn. Bolita Belatove is grown in the central valleys of Oaxaca, Mexico. Aged less than a year in used oak and demijohn glass.
Nose: Light notes fluctuate between creamed corn, buttered popcorn and apricots.
Palate: Earthy, semi sweet and a little viscous, light notes of roasted corn, caramel and vanilla.
Finish: Medium length with earthy yeast notes and a pinch of heat.
Empty glass smells of roasted bananas.

@PBMichiganWolverine exactly right, it’s an heirloom variety. You can check out the website for more info: http://www.workhorserye.com/shop/modern-ancient-heirloom-corn-whiskey-seasonal-selection I suppose producing whiskies from these various different grains is their way of fighting back against the man (Industrial Food Complex).
