Nose dominated by mineral, herbal and smoky notes. Fresh cut grass, stone, petrichor, agave, hints of vanilla, and mint. On the palate rich roasted agave, wet stone, mint, black pepper, white sugar, earth and smoke. My second jabalí and neither has disappointed. They’re almost wild tasting, very fresh, very complex, with flavors that jump out full force.

@Bourbon_Obsessed_Lexington definitely. I’d never seen this varietal and here in Mexico City I’ve found two in the last two days. Both amazing. I think it’s very distinct, and seems wilder, rawer, or something. Hard to describe. If you see it definitely grab some.
I need to track this down, sounds incredible.
