Nose is mostly juniper and a little of olive brine. Taste is mint and bright lime peel with a savoriness and sweetness. Apparently, the distillery tried to make a non-citrus forward gin and they didn't quite succeed. Still quite tasty though.
Would mix fantastically in a martini. We added a tiny pinch of salt to the glass, and it accentuated the floral lavender notes.
