Cachaça Saliníssima has been produced at Fazenda Matrona, in Salinas, in the north of Minas Gerais, since 1955, when Olímpio Mendes started to dedicate himself to planting sugar cane, which was used for the production of cachaça and rapadura. The drinks were bottled and sold in the house, to farm employees, neighbors and friends. Rapaduras, on the other hand, were sold in the city on Saturdays, after traveling a long distance in an ox cart.
In the production process, Alfredo Mendes de Oliveira, son of Olímpio, was responsible for transporting and grinding the cane, while his father was dedicated to the fermentation and stilling of cachaça. At the end of the 1990s, Alfredo and his son, Lucas Mendes, took over the farm, continuing the tradition of artisanal production, both for distillates and rapadura.
In 2003, the mill underwent improvements in structure and equipment, but without losing the artisanal essence in the manufacture of cachaça. Today, continuing in the Olímpio family, Fazenda Matrona continues to be one of the important cachaça producers in the Salinas region.
Cachaça Saliníssima Prata follows the traditional recipe of rustic yeast, using wild yeasts and natural substrates during the fermentation process. Stored for six months in stainless steel barrels, it has an alcohol content of 40% and is ideal for preparing caipirinhas and drinks. Aromatic, alcoholic, evident cane sweetness.
