Complex nose consisting of vanilla, green apple, honey, grapefruit zest, and seawater spray. Letting it sit a while brings out apricot, melon and unripened pear. The palate consists of vanilla, honey, salt water brine, and green apple. I find this to become better and better the more it is allowed to sit and breathe. I did not add any water to this or expose it to cold air or ice but I suspect that the profile would almost completely change.
