Espírito de Minas is produced in São Tiago, a small town in the interior of the state of Minas Gerais, where the Santa Luzia farm is located. Built in 1910, the farm's main house underwent restoration in 1988, reviving the colonial characteristics that marked its original architecture. All the necessary structure for the production of Aguardente Espírito de Minas can be found on the farm itself: the sugarcane fields, the grinder, the stills, the oak barrels and the bottle. The sugarcane fields, as well as the grinder, stills, oak barrels and the bottling plant are located on this farm. The name of this traditional cachaça created by the avant-garde Gilberto Mansur was inspired by the phrase "Espírito de Minas visits me" that opens the poem "Prece de Mineiro no Rio" by Carlos Drummond de Andrade in which the poet evokes memories and the lifestyle of your land. In addition to being one of the pioneers in developing the premium cachaça category in Brazil, pioneering and bringing new things to this market, Mansur has always greatly valued the Minas Gerais way of being and the good things there. Thus, Cachaça Espírito de Minas brings together poetry, the "spirit" of Minas and a taste of Brazil. The production process of Cachaça Espírito de Minas is artisanal and ecological, following strict quality control. Sugarcane is harvested manually without burning. After grinding, the garapa is stored in: wooden vats for fermentation. The sugarcane bagasse resulting from crushing is reused as fuel for the stills or used to feed the farm's livestock while the vinasse mixed with manure becomes fertilizer for new plantations. No chemical elements are used to speed up the fermentation process, just the purest cornmeal produced on the farm itself. Distillation is done in copper stills and aging in oak barrels where the drink remains for a minimum period of one year. Tasty and aromatic, Cachaça Espírito de Minas can be enjoyed pure at room temperature or chilled and used in various drinks. This tradition is revived every time the drink is served, whether in glass goblets or more rustic glasses, but always in the company of good friends. Cachaça Espirito de Minas Ouro 700ml is stored in oak vats for a year and a half, thus presenting a golden color.
