A rich, Single Grain, Single Malt Irish Whiskey by brothers Conor & Alan Hyde founders of Hibernia Distillers in Skibbereen, Ireland made with 100% corn, triple-distilled in a Coffey column still, aged for 6 years in re-charred ex-Bourbon casks before being finished for 6 months in Burgundy Red Wine casks from the Côte d’Or.
It has an aromatic birth with notes of tart strawberry, ripe cherry over crème brûlée, toasted oak & brown sugar; while a rich & creamy life adds notes of roasted pecans, Crack Jacks, frosted cinnamon rolls, grapefruit bites & a hint of vanilla; that leads to a long death with notes of berry pop-tart, dried fruits & mocha.
