A semi-sweet, gluten & sulfite-free, vegan, small batch, artisanal, sparkling Sake by Toji (master brewer) Kimio Yonezawa for Akashi Sake Brewery in Akashi City, Hyogo prefecture, Japan. It is crafted with local rice milled to 60%, koji & pure water; that undergoes a 2nd fermentation to add natural carbonation; before being bottled at 7% ABV.
It has a delicate birth with hints of tropical fruits, rice & spices; while a rich life with a medium body & fizz adds hints of lychee & citrus rind; that leads to a quick & zesty death with medium acidity. August 2022
