A balanced gin, made with a mixture of 9 classic gin botanicals, as well as a feature botanical - sage. The sage used is locally foraged from the grounds surrounding the distillery, and adds an intriguing savory edge to the gin, carried by the brilliant mouth feel stemming from the 7-times-filtration method used after distillation. It opens with notes of vanilla, hints of fresh lemon & cassia; while the palate adds notes of juniper & earthy sage; that leads to a medium finish with a hint of cinnamon heat. February 2018
