A crisp, additive free, Agave Spirit, by the Villalobos family Nom1635 in Jalisco (Los Altos Southern) crafted in stainless steel before being bottled at 40% ABV.
It has an aromatic birth with notes of cooked agave, citrus, nuts, herbs & spices; while a rich & full life adds notes of lemon, apple, bell pepper, olives, thyme, honey & vanilla; that led to a complex death of medium length with notes of white pepper, cardamon & sea spray. (a delicate gin?) January / February / September 2025 / April 2026
