From High Bank Distillery: On the nose, there are notes of malted chocolate and freshly cut oak. On the palate, there are sweet wheat, caramel, honey, and candied nuts, finishing with leather and dried apricots. My take batch 01: I pick up the oak but not the malted chocolate. I smell the wheat and the oak. Its pleasant and not overpowering. On the palate, wheat, and honey. A little nutty. Can’t distinguish the leather which I think is a joke of a description. Very smooth mouth feel. Finish is short with a light apricot and carries forward the wheat throughout from nose to finish. Overall, it is an “okay” first bourbon offering from High Bank Distillery. Hopefully there next batches get much better with time.
