🥃 Flavor Profile Barrell Dovetail is known for being one of Barrell Craft Spirits’ most layered blends. Because it’s finished in rum, port, and cabernet barrels, you get a combination of sweetness, dark fruit, and tannin structure. Typical Nose • Brown sugar, molasses (from the rum casks) • Dark berries, plum, fig • Toasted oak, vanilla • Occasional floral notes and warm spices Palate At 62.71% ABV, expect intensity: • Caramel, toffee, and brûléed sugar • Blackberry jam, cherry reduction, dried fruit • Baking spices: cinnamon, clove • Some red-wine-like tannins and a bit of dryness • A touch of tropical sweetness from the rum influence Finish • Long, warming • Chocolate, spice, fruit compote • Slight oak grip and dryness from the cabernet barrels ⸻ 🔍 About the Blend Barrell rarely discloses exact mash bills or source distilleries—they blend sourced whiskeys from multiple states. Dovetail is built on: • Bourbon + American whiskey, blended and finished • Finished in: • Rum casks (sweet/tropical) • Port pipes (dark fruit, richness) • Dunn Vineyards Cabernet barrels (tannins, refined structure) The “Dunn Vineyards” element is one of the things that makes Dovetail unique—they’re a high-end Napa producer, and their barrels add elegance to the whiskey.

    Light in color. Sweet on nose with slight alcohol burn. Medium on palate with tinge of sweetness upfront and throughout, followed by intense spice kick. Medium finish of sweet heat followed by dry finish. Each of the finish barrels appeared prominently throughout the tasting.
