Visual: Golden Amber; thin evenly-spaced legs.
Nosing: Wood varnish, overly ripe apple; lots of oak, baking spices, namely apple pie filling.
Tasting: Warm French Vanilla with fresh oak on the back end. A bit hot, but punchy and spicy. Has some Cognac notes on the finish but very subtle. A slight saltiness to it.
Reduced Nosing: Some dark fruits and stone fruits come through with some water. Much more oak and vanilla comes through as well. Like warm apple pie and vanilla ice cream.
Reduced Tasting: Very, very smooth with water added. Salinity is still there, but there's pleasant cinnamon and oak notes.
Solid dram for a Canadian "bourbon" style whisky.
