Sherry-like (I am aware of that it seems not a sherry cask), oaky, very, and smoky (not peaty), vanilla, cake, ice cream, brown sugar, quite briny, peachy, and both chilli and herbal pepper spice on the nose... and something combined quite unique that I can't address - water chestnuts? Well... nah - a fairly complex nose. And then you drink what you smell.
Rich, full, flavourful, sticky, enthusiastic and extensive.
