Nose: Fresh and ripe green and red apple medley, fresh caramel (candy apples), rich toffee, dried fruit (sweet sultana raisins, prunes, dates), salt water toffee, dehydrated strawberries, candied lemon peel and sweet lime,
some heather and peat smoke, some sweet sherry, a touch of honey, hint of white perfumey flowers, some earthy tobacco and maritime soil, a hint of leather and wood spice, maraschino cherry, dark vanilla seeds in the backround, a little black liquorice and spearmint, a hint of pine, some fudge and raspberry marmalade
Palate: Notes of white vermouth (herbal,botanical, spicy white wine), some sherry, a hint of peat smoke infused with refined bonfire smokiness, slightest hint of cask char smoke, red and green sweet apple medley, hint of honey and vanilla, some wood spice and mild white pepper spice, a hint of sweet lemon peel and lemonade, some salty sea brine, green grapes and pear
Finish: Sweet peatiness, green grape skins, some green apple, pear, ever so slight spicy bitterness, some chilli pepper warmth, some old caramel, some salty-savoury bacon and sea brine, some candied clementine peel
