This is light-bodied and tastes green and vegetal...with a dash of salt? Like leafy greens with a bit of pepper. I was hoping for more bread or cereal notes because of the wheat, but no. However, this *is* my first tasting; it may get better after more tastes. ... Okay, 2nd tasting here... I'm getting a lot more sweetness and no strange saltiness. Still very thin, though. But "bright". And much better than my 1st tasting. I think letting it sit in the bottle after the first pour, mellowed it out. ... 3rd tasting: The salt is back--and it's soft and mineral-y; I'm getting sea salted caramels...which is actually not bad at all.
