Tastes

Tasting neat: Nose of dark fruit, vanilla cream, and leather. Taste of allspice, cinnamon, orange. Finishes with pepper and oak.

Tasting neat: Nose of wheat and vanilla and light cinnamon. Strong taste of cinnamon and anise spice with strong heat and light oak. Long slow spice finish.

Tasting neat: Nose of orange, vanilla, and pepper. Taste of chocolate and spice. Long lingering spicy finish with astringent pepper and dark cherry.

Tasting with a splash of water: Nose of light fruit and citrus with slight smoke. Taste of cocoa powder and wood with vanilla and sugar. Finishes softly with subtle smoke.

Tasting with a splash of water: Nose of vanilla and bandaids and some citrus. Soft palate of butterscotch and campfire and chocolate. Lingering finish of smoke.

Tasting with a splash of water: Nose of orange, brown sugar, and vanilla. Tastes of astringent orange, oak, and dark fruit. Soft lingering finish of vanilla, dried fruit, and some heat.

Tasting neat: Nose of orange jam, apricots, cinnamon and clove. Palate is soft with dark cherry, orange, leather, and subtle smoke. Finishes subtly with smoke at first, followed by heat, leather, and tobacco. Update: adding a splash of water softens the nose to chocolate orange and opens the palate with chocolate and plum. Softer finish with more vanilla.

Tasted neat: Nose of vanilla and cedar. Taste of leather, cedar, clove. Long spicy and hot finish.

Aged 1y 5mo in rum barrels. Tasting neat: Nose heat, oak, rum sugar, banana, and clove. Taste is soft with brown sugar, star anise, leather. Finishes with spice, vanilla, and more banana.

Tasting neat: Nose of strong mint, lemon, and anise. Taste of hot spice, vanilla oak, leather, and licorice. Finishes long and spicy.
