First pour from a freshly opened bottle. Nose: Vanilla & Toffee/Caramel. Quite sweet. I get some baking spice as well, (I think more cardamom or nutmeg). Didn't find much fruitness in the nose. Palate: For me this was quite hot in the mouth, especially compared to the proof. Very thick and creamy, coats the mouth. Baking spice showed up first with a bright and very brief pop of fruitiness. The fruitiness subsided into just a very soft/round non-descript fruitness (baked apple or stone fruit maybe?). There is definitely some spearmint like the spiciness when you put a piece of gum in your mouth. Some slight biscuity yeastiness as well. Finish: A little hot and warming. Lingers for a while. Some more of the baking spice. Still remains sweet the whole way through. When the glencairn got low, I got a brief whiff of mustiness/leather on the nose. Quite enjoyable, and I got quite the deal for the bottle.67.99 USD per Bottle

First pour from a newly opened bottle. Nose has some vanilla and baking spice. Hard for me to get much more beyond that. Palate was very much baking spice and oak. Very woody on this pour. Vanilla makes a slight appearance, but at least for this first pour, i wouldn’t call it a sweet bourbon. One sip had a brief pop of citrus (lemon?) and black pepper. Finish is not terribly long and all that remained was really the tannic oak woodiness for me. I’d also say I was surpsied that some sips seemed quite hotter than the ABV would suggest. Overall, hoping the bottle improves over the next few pours.38.99 USD per BottleCanal Ponds Liquor
