Hibiki 21 is a truly stunning example of what we’ve come to respect the most of Japanese whiskey. The nose opens with cherry blossom, plums and incense spice. It then moves to fruit cake and creme caramel. The palate is buttery and even as the long, lingering finish reminds one of Louis XIII Cognac. If you ever find a bottle, which is almost impossible, buy it!

The last time I purchased this Japanese Harmony version of Hibiki, the price had doubled from its previously well priced offering, making it an over priced version for its actual quality. I just got my hands on Hibiki 21 and this one has spent 21 years refining itself into something that halts time itself.
