Tastes

The first sip is incredibly earthy and tastes like green tea machia powder mixed with vanilla. Instant heat but not overly so. Very Willet like profile. Second sip blasts grassy notes, all-spice, and huge bursts of cinnamon. It has that Willet 'funk' that I really am growing to like in small end of night sips. The finish is more spice and pungent oak. I think this works best as does Noah's Mill as a third or fourth pour to gently sip at the end of the night. I'd guess this isn't for everyone but if you like earthy and pungent flavors it's a nice bottle for under 30🦌.

Wow... Beautiful nose of baking spices, cherries and notes of brown sugar and vanilla. Sweet notes on the pallet, slightly oily coating that spreads the flavor around the mouth. Vanilla cherry, and bread pudding ends with rye spice tingling on the tongue and slight heat on a fairly long finish. The finish lasts for a deliciously pleasing time ending with an oak leather ending. Fantastic.

Carmel, Vanilla, spices on the nose. Palet tastes like typical bourbon and tastes like the nose. It's ok, not great.

Rich and floral. Vanilla, carmel sweet palette and great mouth feel. Baking spices. Medium Oak finish with rye spices. I really like this stuff.

On second try I'm really digging this stuff. It's full of a funk that somehow I'm loving. Maybe it's the bottle opening up but even still, it's not the typical bourbon flavor profile. It's leathery and grassy and flowery with huge barrel charred oak. Underneath is a chewy carmel sweetness. To me this is an incredible night cap and it's better without water or ice. For me that's rare. This can't be your first sip of the night though...it just is too funky which is why I think we see so many all or nothing reviews. People hate it or love it and I think it just depends when and how you are drinking it. With small pours, tiny neat sips, this stuff is pretty unique and brings a delightful swirl of flavors to end the night on.
