This is a bourbon distilled by me. 48% abv, aged in smaller barrels, and depending on batch number could be 10G (early batches) or up to 30G (later batches). I used Barrel Mill char 3 barrels and a 51/34/15% corn/rye/barley mashbill. It was fully understood (by me) and conveyed, in detail, that both the Red Saw rye and bourbon were young small barrel aged whiskies. As such, you don't achieve much esterification and "aging" on oak. Instead its more of an "infusion" of oak flavors over a shorter period of time. Less refined, less mature, and disjunct between whiskey and barrel flavors. An unfortunate necessary choice for a young distillery. This bourbon was aged in 53G barrels along side the smaller ones, unfortunately it did not see commercial release prior to the distillery closing in 2020. Batch 1 Tasting Notes: -Nose: corn, spicy, hot ethanol -Mid Pallate: corn, black pepper, ethanol -Finish: subtle oak, sweet cherry, fleeting.

This is an absinthe distilled by me. La Cascade Verte, the partner absinthe to La Cascade Rouge, is a traditional style absinthe utilizing wormwood, anise, fennel in distillation, and colored with hyssop, lemon balm, spearmint, and petite wormwood. The bottle proof is an imposing 70% abv, intended to facilitate traditional absinthe service and stand strong within cocktails that utilize the spirit. The nose has a prominent anise and spearmint character, with a light opalescent louche when diluted nearly 5 parts to 1. Palate is herbal, sweet, minty, and bitter. Stands well with or without sugar.

This is a gin distilled by me. Devil's Bathtub Gin was distilled from in-house made neutral rye spirit and vapor infused with 11 botanicals in all. The primary palate notes include a deliberately subdued juniper, cinnamon, nutmeg, and other baking spices. The resulting spirit is warm and sweet. Finally, a cucumber wash is applied post distillation to round out the mouthfeel. The brand inspiration is from a local kettle pond notorious near the distillery.

It was fully understood (by me) and conveyed, in detail, that both the Red Saw rye and bourbon were young small barrel aged whiskies. As such, you don't achieve much esterification and "aging" on oak. Instead its more of an "infusion" of oak flavors over a shorter period of time. Less refined, less mature, and disjunct between whiskey and barrel flavors. An unfortunate necessary choice for a young distillery. The good news is that the same exact mashbill was aged in 53G barrels for the Grist and Saw Empire Rye along side the younger barrelings. Its the same whiskey just aged in 53G barrels for at least 2 years. A good comparison between small barrel aging and standard barrel aging. Batch 1 Tasting Notes: -Nose: grassy, spicy, hot ethanol, subdued oakiness -Mid Pallate: young rye pepper spice, green apple, ethanol -Finish: trailing finish with subtle oak and whitedog whiskey notes.
