Reviewed March 1, 2016 (edited December 10, 2017)Won best spirit of the world in 2005. 90% Spanish oak sherry cask in 2nd fill barrels. Perfect chemistry of the barrel and new make spirit. 45.7% - creme brule, dried apricot, complex, warming, dark chocolate, orange rinds. -

Single Malt — Islands, Scotland
Reviewed March 1, 2016 (edited December 10, 2017)Hp 21 uses American oak sherry - 60% first fill barrel. Take your time with this one, needs to sit 15-20 minutes. Nose: different territory - 47.5% abv. Over ripe banana, brown sugar. Finish - smokiness disipates, deep complexity - leather seats. -

Single Malt — Islands, Scotland
Reviewed March 1, 2016 (edited October 21, 2017)Cinnamon and nutmeg on the nose. Palate: smoke is reduced. Finish: stronger then 12. Pricking on side of tounge- more woody finish. -
Uses mostly Spanish oak. Using 2 cask types - American and Spanish. Made exclusively for canada initially. A high concentration is 15years and above. Pale gold in colour. Nose: vanilla, beads showing good viscosity. Citrus notes - some of the smokies highland park - older it gets the less smoke/peat. Peat is mixed with heather which gives honey sweetness. Trademark of highland park. Palate: Finish: sweet, honey - dark chocolate. Woody. Side of toubge is spicy like ginger. Tip of tongue brings sweetness. Body 2/4 - light
