This one is matured in a higher percentage of first fill sherry casks than the 18 year old.
Highland Park distillery, considered the jewel of Orkney Island, has released a 25 year old version of their core expression Scotch. This one is matured in a higher percentage of first fill sherry casks than the 18 year old. The distillery is known for drying their barley with Hobbister Moor peat, which burns more floral and less rubbery and briny than from Islay.

Tasting Notes
"Sometimes you need to start with the end, and it's important to note that the finish here is much drier than the younger (18 Yr) and even older (30 or 40 year) malts from HP. That said, hello, this is Highland Park 25! Of course it is beautifully balanced in flavor between vanilla, caramel, honeysuckle, orange blossom, pipe tobacco and bittersweet chocolate. But the extra sherry contact does stop these flavors short ever-so-slightly. You'd probably only notice if you've had the pleasure of tasting through most of their expressions to detect the slight difference."
