Reviewed November 10, 2022 (edited December 8, 2022)This one lives up to the hype (if you pay a fair price). Batch: C922 Nose: deep caramel, toffee, vanilla goodness. Despite the high proof, very minimal alcohol smell. Palette: smooth as hell - delicate oak, plums and apples, vanilla. This one is certainly complex and goes thru a couple distinct stages. Will need to revisit to get the full list. Finish: maple, cinnamon, oak, and an interesting spice that lingers beautifully Overall: this is a damn fine bottle of whisky. Redwood Empire Cask Strength Pipe Dream (2022 Release)

Reviewed October 31, 2022 (edited November 7, 2022)My local liquor store had one of these left, and I decided to pick it up despite never having tried the original Pipe Dream. I am always very skeptical about these new distilleries, but after hearing good things I figured why not. Nose: remarkably strong vanilla - very sweet and pleasant. Hints of citrus. Palate: hot and sweet with sour green apples, spicy citrus, and cherry wood Finish: cinnamon, orange, spice, and oak Overall: This is a very unique and delicious bottle! Can’t speak for the regular expression, but the cask strength is very exciting and fun. I will be going back to pick up the regular bottle since this one was so delightful. Green Apple all day! Confusing nose, but I like it. Pleasant fruity apple palette, hint of peat that lingers into the finish. It’s almost sour, which I could see some not liking. Nice to sip for the proof - definitely doesn’t feel as heavy as some other 55% bottles - possibly because the sweetness masks it? I haven’t tried any other Indian whiskies, but now I’m excited to get my hands on some. Definitely a unique experience.85.0 USD per Bottle

Alcohol-forward nose with hint of fruit, unique but not particularly great nose. Remarkably smooth palette, nice gentle fruity sweetness with nice strong plum and grape flavour (in a balanced way). Nice viscosity on the tongue, very clean and virtually no alcohol burn. Little bit of a soft plum, cherry finish. Little bit of wood in the finish, doesn’t dominate, leaves room for other flavors. Fantastic sipper, pick up a bottle before people find out how good it is.120.0 USD per Bottle

Knob Creek Single Barrel Select Bourbon

Reviewed October 8, 2022 (edited November 26, 2022)Smooth as hell for 120 proof! Pleasant nose, sweet like brown sugar and honey. Palette has a cinnamon spice that builds through the finish. Very woody finish, heavy in oils. My girlfriend (who hates whisky) actually liked this one, despite it being 60% alcohol… let that be a testament to how smooth this bottle is.
