291 Colorado Bourbon showcases a high-corn mash bill of 80% corn, 19% malted rye, and 1% malted barley. The whiskey is matured for approximately one year, and then undergoes a finishing process with charred Colorado Aspen staves. Tasting Notes

"A surprising fruity note strikes first on the nose, with pears and baked apples, followed by cocoa powder, vanilla bean, and baking spices. The palate is quite rich as it begins, shifting to tannic wood, with cinnamon, vanilla, spearmint, and dark chocolate. An extended finish offers char, molasses, and allspice."
