Cask Number Batch Number 51/2017 A crisp, Unaged Rested Cachaça; certified organic, gluten free & vegan friendly; by Marcos Vaccaro, Tom Stockley & their team for Fazenda Vaccaro Distillery in Bahia, Brazil & Headquartered in Bristol, U.K. After distillation it is rested in open-air, stainless-steel tanks for 6 months to allow the flavors to develop; before being bottled at 40% ABV with zero added sugars. It has an aromatic birth with notes of ripe stone fruits, herbs, tropical fruits & flowers; while a thick & rich life adds notes of plantain, apricot, mango, grape must, warm peaches, sweet sugarcane & honey; that led to a caramelized death of medium length with a hint of biscuit.
