New England Sweetwater Farm & Distillery had their grand opening in Spring 2016. To make their gin they redistill their premium vodka (made from apples and potatoes) with their farm-grown junipers and other classic botanicals which are introduced via vapor-infusion.
Distilled GinThis style of gin takes a neutral spirit and then adds juniper berries and other natural flavorings before it is re-distilled. After distillation, additional flavors (artificial or natural) and sweeteners may be added.
"While this gin isn’t harsh it doesn’t have much amplitude either. The nose is light with potpourri, thyme, and star anise. The palate is a melange of thyme, juniper, and cardamom pods. Nothing ever jumps out and takes the spotlight. A Tom Collins would blend well and bolster this gin."
