Baker's Single Barrel Bourbon 7 Year

I felt this drank warmer than it's proof and it didn't have a standout characteristic. I'm confused on this offering when Beam also has Knob Creek single barrel which has a higher proof and aged longer. This bottle of Baker's was sub-par - not bad, but better exists. This was bottle with serial number 000330454 from warehouse CL-Z aged 8 years, 2 months.

Vanilla, corn, oak on the nose. Palate is fairly rich in caramel and beam nuttiness. Slightly syrupy texture. Finish falls a little dry and woody. Some cornmeal and caramel too.

A- medium amber. N- smooth wood with vanilla and sugar notes. T- A bit warm to start. Lightly toasted marshmallow. Some pepper spice that disapates quickly. Chilled with a touch of water and the spice almost completely dissappears. Just a nice smooth marshmallow flavor with a touch of wood. Yum! B- medium/light body. Not thick or slimy nice full smooth. O- I really enjoy this best sipping with a few ice cubes. The fire really dissappears chilled and makes for a wonderful easy desert of a whiskey.

Honestly I didn't know what to think at the start, but the more I sipped the more I liked. I would say this is great after the meal sipping whiskey. Not harsh for the proof and the right amount wood flavor. I will keep this in my collection.
