For Caledonia Spirits founder Todd Hardie, distilling runs in the family: His Scottish ancestors distilled whisky prior to immigrating to America. Hardie, who has worked 49 years as a beekeeper, started the distillery in 2008 as a way to support the local agricultural community. Barr Hill Gin uses a pure grain spirit before juniper berry is added during distillation in a custom-built extraction still. Prior to bottling, raw northern honey is added to the spirit. It's bottled at 45% ABV.
Distilled GinThis style of gin takes a neutral spirit and then adds juniper berries and other natural flavorings before it is re-distilled. After distillation, additional flavors (artificial or natural) and sweeteners may be added.
"On the nose, juniper comes on strong for a moment before it's balanced out with sweet citrus and floral notes. A honeyed, lemon quality is consistent through the palate and is complemented by balanced lavender and orange blossom notes and mild juniper, with rich baking spice and cedar undertones. This gin would be fantastic in a number of applications, particularly when the floral, honey flavors are allowed to shine through."
