Empress 1908 Gin

Released in the US in the summer of 2017, Empress Gin achieves its indigo blue color with the infusion of butterfly pea blossom. The pH of this blossom is such that the addition of citrus or tonic will change the color of the gin from indigo blue to a light pink. In addition to the butterfly pea blossom and requisite juniper, the gin uses blended tea from Victoria's own Fairmont Empress Hotel. Other botanicals used are grapefruit peel, coriander seed, rose petal, ginger root, and cinnamon bark. All botanicals are organic and the spirit base is non-GMO corn.
Distilled GinThis style of gin takes a neutral spirit and then adds juniper berries and other natural flavorings before it is re-distilled. After distillation, additional flavors (artificial or natural) and sweeteners may be added.
"Once you get past the relatively shocking violet color of this spirit, you are left with a very serviceable, classic London Dry gin with a burst of floral character. The nose carries assertive flavors of citrus pith and bitter root, but when tasted a slightly sweet violet perfume lingers in the mouth and lends itself to a round, glycerol mouth feel. A unique product that makes a very good gin and tonic or a very oddly colored martini."
