Black Gate distillery has made recent spotlight with their sherry cask whisky, but their rum has always been their pride and joy. Made from fermented refined molasses, the rum is double-distilled in a direct-fired copper pot-still and then matured for two years in a 100-litre ex-Sherry cask. Note: This is only available for sale in Australia.
Aged RumRum that is aged, but no specific type or size barrel required. No set time required for length of aging, but will often carry an age statement (which should be taken with a grain of salt). Often thought of as "sipping rums".
Cask Typeex-Sherry Cask
"Immensely sharp and dry notes waft with dried honey and open fruits. The molasses blends with the sherry to make cherries glazed with golden syrup, caramel fudge and heavy vanilla. On the tongue it turns to toffee fruits, and cocoa lightly dusted with cinnamon. Dried fruits appear next with banana and pear quite prevalent. Spices fall gently over the taste buds. The finish is surprisingly long with vanilla and brown sugar giving way to a cinnamon and honey end that completes this well made rum."
