Reviewed August 8, 2024An intense, Pechuga Mezcal by Mezcalero Adrian Bautista for Bozal Distilery in Oaxaca, Mexico. It is made with wild Maguey Castilla from the hillsides of Oaxaca & Guerrero in a copper still. During the second distillation, a leg of lamb, in addition to seasonal wild fruits & grains harvested from the local market, are suspended inside the bottom of the still in a basket. These wild fruits include strawberries, apples & pineapple, while additional ingredients consist of pecans & ginger. It has an aromatic birth with notes of citrus, berries, tropical fruits, salt dried meat, earth, nuts, herbs & spices; while a complex life adds notes of pineapple, agave, smoked lamb, onion, strawberry, salt, ginger & ground pecans; that lead to an oily death of medium length with notes of pepper, earth, smoke & sea spray.
